Zucchini stuffed with rice
I am transmitting old recipes from the recipe book "Scents and Memories", published by the Society "Croatian Woman" from Petrinja, 2000. for its 10th anniversary of restoration work.
Preparation steps
- Clean the zucchini, wash them, and cut them in half lengthwise. Remove the middle and boil in salted water. Drain them and place in a fireproof dish with a little oil.
- Meanwhile, sauté the chopped red onion with the diced bacon in butter and oil.
- Cook the rice, rinse, then add the drained onion and bacon.
- Fill the zucchini with this stuffing, sprinkle them with a few drops of oil and put them to bake in a hot oven for about twenty minutes.
