Zucchini pedals
This is a recipe from the July-August issue of Sale & Pepe from 2007. I don't even know how I've missed this so far. Simple, and so perfect. An ideal start to Sunday lunch.
Preparation steps
- Knead 450 g of flour, yeast, a little salt, oil and lukewarm water into a firm dough to separate from the fingers. Form a ball and press the cross with a sharp knife. Return the dough to the bowl, then leave covered for 1 hour in a warm place.
- Take the dough again and knead for a few minutes. Divide it into 8 noodles. Using a rolling pin, stretch the noodles into 2-3mm thick pedals. Arrange them on 2 baking sheets lined with baking paper.
- Peel a squash, grate it and cut it into thin strips with a potato peeler. Wash the tomatoes and cut into slices, as for a salad. Cut the smoked cheese into thin slices.
- Arrange the zucchini on pedals (you can also put two strips on one pedal), salt, pepper and sprinkle with olive oil. Place pieces of smoked cheese on top and bake in the oven at 220 degrees for about 20 minutes. When you take the baking trays out of the oven, arrange the tomato slices on top, and return to the oven for a few more minutes. Serve warm and pepper to taste.
Serving
I made it twice and on the second round I put some pepper with garlic and those were great. The first tour was served warm and the second we tried cold and in both cases they are perfect.
