Zucchini Börek (Kabak Böreği)

Extremely good taste of this burek, and for me this is a pie. It is made with purchased crusts and wrapped like a burek, but I didn't have a casserole (they are in boxes somewhere) and I made it like a pie. You now have zucchini in abundance, try it yourself.

Preparation steps

  • In a large bowl, grate zucchini, add lightly beaten eggs, pepper, salt (be careful because the cheese is salty), hot beaten pepper, red ground pepper, dill and mint, mix everything and leave to stand for 15 minutes.
  • Crumble the feta cheese and set aside. Drain the zucchini well with your hands and put the crushed feta in the drained zucchini and mix everything. Add oil and yogurt to the liquid left over from the zucchini and mix everything.
  • Take one crust, put the other crust on the side, overlap a little and pour 4 to 5 tablespoons of yogurt mixture and brush, sprinkle with a sixth of the mass of zucchini (I have 12 crusts in the package) and roll into a roll (as Due to the lack of a baking tray, I made it in a rectangular tray and I did not wrap them in a circle, but I made rolls of 3 crusts. wrapped in a roll, like a pie and put on a baking sheet.I got 4 rolls.I sprinkled two rolls with the mass and made two rolls as in the picture and I personally like it more as in the recipe picture.
  • Grease a baking tray, 28 cm with a little oil, or cover with baking paper. Wrap the roll you wrapped in a snail and place it in the middle of the pan. Now do the same with the other two crusts and continue to wrap around the zvrk, which is already in the pan, where the previous end ended. Continue to roll and other rolls while you have the material. When you have finished wrapping the rolls in a circle, if there is a little liquid left in the bowl, coat the top over the pie. (instead of two crusts, it can only be made with one crust, but this way it's faster for me)
  • Preheat the oven to 190 ° C and bake the pie for about 50 minutes or until nicely browned. Cool it in a pan, cut it into triangles, or tear it with your hands and serve it warm with yogurt or sour milk.
