Zucchini and chicken fritters

The perfect way to use leftover roasted chicken :)

Preparation steps

  • Grate the zucchini, add salt and let it drain
  • Finely chop the chicken, grate the carrots
  • In a large bowl, place the drained zucchini, meat, carrots, cheese, eggs, spices, salt, pepper, and flour as needed to make a thick, moldy mixture.
  • Using a spoon, take out smaller amounts of the mixture and form balls, then press them lightly to get fritters
  • Roll the fritters in flour and fry in hot oil until golden yellow

Serving

Serve with your favorite sauce or liquid yogurt and salad as desired
