Zucchini and chicken fritters
The perfect way to use leftover roasted chicken :)
Preparation steps
- Grate the zucchini, add salt and let it drain
- Finely chop the chicken, grate the carrots
- In a large bowl, place the drained zucchini, meat, carrots, cheese, eggs, spices, salt, pepper, and flour as needed to make a thick, moldy mixture.
- Using a spoon, take out smaller amounts of the mixture and form balls, then press them lightly to get fritters
- Roll the fritters in flour and fry in hot oil until golden yellow
Serving
Serve with your favorite sauce or liquid yogurt and salad as desired
