I changed the basic recipe a bit because I was already making something similar the same day so they wouldn’t be the same. Although I’m not a fan of coconuts I have to say they turned out great.

Preparation steps

  • Whisk the margarine with the sugar and add the eggs.
  • Mix together all other dry ingredients (flour, coconut, pp, salt).
  • Add the dry ingredients to the wet ones and knead a smooth dough that doesn’t stick to your hands.
  • Divide into 4 parts, add colors as desired and wrap each part in plastic wrap. leave in the refrigerator for 1 hour.
  • Roll out two balls between two layers of pvc foil to a thickness of approximately 0.5 cm or slightly thicker.
  • Place one dough on top of the other, press a little with a rolling pin and roll into a roll. wrap in foil again and leave in the fridge for another 1 hour. Do the same with the other balls.
  • Cut the biscuits to a thickness of 0.5 cm and place them on a baking tray covered with baking paper.
  • Bake for about 15-20 minutes at 200 ° C. I baked them for 15 minutes.
  • Leave the finished biscuits to cool a bit in the tin first and only then take them out on the rack to cool completely.
