Zaloouk is a famous Moroccan salad with roasted eggplant that is served as a salad or dip or sauce..I use it in everything and I think the only recipe is that I made 4 times a month ... of course I shared it with friends who were delighted ...
Preparation steps
- You can peel the eggplant, you can half-and-half peeled or whole to grow ... Cut into slices, sauté and salt and put in a preheated oven at 200 C to grow for about 20-25 minutes. Blend the melted eggplant in a blender.
- While the eggplant is baking in a blender, add a whole bunch of fresh parsley (USE STABLES NOT JUST FLOWERS). Then add garlic and extra virgin olive oil .. and blend everything together ... (for parsley about 2 full sake since it is sold here in rebellion)
- Heat a larger skillet then add the parsley mixture and mix..then add the ground cumin and sweet red pepper..fry for about 3 min ..
- Then add the tomato concentrate and fry afterwards for 3 minutes ... add the blended roma tomato from the can and let the mixture boil ... reduce the temperature and cook all together for 10 minutes ...
- Add the blended eggplant to the tomato mixture ... mix
- Let it cook for 10 minutes ... You can add about 50 ml at the end. sweet cream if you want ... I am ... you as you wish ...
Serving
This is a double measure ... if you want to halve the ingredients less ...
