Yule Log (Stump) with walnuts and Mascarpone cheese
What can I say but that it smells, tastes and looks like Christmas. With this wonderful dessert, I wish all those who celebrate a merry and blessed Christmas, and that the birth of Christ brings them an abundance of health, peace and love.
Preparation steps
- First make a roll biscuit by separating the eggs and beating the egg whites into a stiff foam with 5 tablespoons of sugar and salt. In a separate bowl, beat the egg yolks with the other 5 tablespoons of sugar and vanilla until they become pale yellow. Using a spatula, combine the beaten egg whites and yolks, and finally carefully mix in the walnuts and flour.
- Line a rolling pin with baking paper, coat with butter and sprinkle with flour. Put the finished dough on the prepared baking tray, and spread it evenly and flatten it on the baking tray.
- Bake the biscuit in a preheated oven at 150 degrees for about 30 minutes. Sprinkle the kitchen towel with powdered sugar, then transfer the baked roll to the towel, and roll it slightly and leave it to cool for 1 hour.
- For the filling, beat the sweet cream into a firm foam. In another bowl, mix both cheeses, sugar, orange peel, liqueur and vanilla into a fine foam. Mix the whipped cream into the cheese mixture with a spatula. Store in the refrigerator until use.
- Roll out the cold roll and coat with 2/3 of the filling. Roll it up again and coat with the rest of the stuffing on all sides. At this stage, I usually put it in the fridge to spend the night, so I form and decorate it the next day. If you don't have that much time, let him bet for 1 hour.
- Meanwhile, melt the chocolate and coat it in a thin layer on baking paper. Let it cool out, you can also put it in the fridge for 10 minutes.
- Cut the ends of the cooled roll obliquely and place them next to or on the roll as you wish.
- Tear off the cooled chocolate and cover the whole roll with pieces of chocolate so that each next row overlaps the edge of the previous one, simulating the bark of a tree.
