Preparation steps

  • BETTER THAN LOVE
  • Roll out into a thin puff pastry and bake 2 equal crusts (Bake on a baking tray measuring 32 × 22 cm)
  • Let them cool a bit
  • While the crusts are cooling, we put nylon foil and a frame on the tray on which we will prepare the cake, and then we start making cream.
  • Mix fresh ricotta with sugar and mix well
  • We add one strawberry yoghurt and (I used Cremoso, 330 g, from Lidl but you can also use any other two creamy yoghurts in a smaller cup) and 1 wild strawberry fruit cream yoghurt (Euphoria, Vindija)
  • Let's put it all together and set it aside
  • Prepare 2 white gelatins and 8 tablespoons of water and let it swell
  • Chop the strawberries into smaller pieces (not too small)
  • Beat 2 egg whites in solid snow and add a pinch of salt and 3 tablespoons of sugar.
  • Make whipped cream that is not completely firm and add instant gelatin fix (Dr.Oetker)
  • Now we add whipped cream to the ricotta and yoghurt cream, then the previously prepared and dissolved gelatine by first adding 2 tablespoons of cream to the gelatin, combine it well and then mix it all into the cream.
  • After we have combined everything well, add the chopped strawberries and finally lightly stir in the solid egg whites (mix it lightly with a mixing spatula).
  • We put the first crust of puff pastry on nylon foil
  • Spread the cream evenly on the crust
  • Smooth everything well and cover with another leaf crust
  • Store the cake prepared in this way in the refrigerator to cool
  • It is best to make it the day before so that everything permeates nicely
  • Cut into cubes and sprinkle with powdered sugar

I also made the cake in a version with a biscuit base (400 g ground integral biscuits + 80 g butter + 3 tablespoons rum + 3 tablespoons milk + 3 tablespoons brown sugar) and this cream… Decorated with white and dark chocolate, sprinkled with grated lime zest … It was very very fine… Creamy yogurt
