Wok with soybean pieces
When you combine the need for a quick lunch during the summer heat and cleaning the refrigerator from the remnants of various vegetables, you get just this recipe.
Preparation steps
- Put the soybean pieces in the boiled vegetable stock (you can also use water with a mixture of spices). Leave for about 30 minutes to soak.
- Saute onions cut into crescents in a little oil, peppers cut into strips, a mixture of root vegetables also cut into strips (I had the finished mix in the freezer). Salt. When the onion is a little wilted, put the beans and add more spices as desired (I used Kotany mix of spices for the wok). Cover and simmer in its own juice until the beans are half cooked.
- Add the soy pieces, broccoli and zucchini cut into strips. After that, simmer without the lid because the soy pieces will release water. Towards the end of cooking you can add a little turmeric and pepper. Leave on the fire until the liquid evaporates.
Serving
It is equally good when eaten hot or cold. If you want to "enhance" the dish, when it is ready, stir in cooked quinoa, millet or something similar.
