Wine chateau pancakes

Preparation steps
- From the pancake batter, bake the pancakes. (It's better for me when I mix with a whisk than with a mixer, then it's too foamy for me.)
- Fill the pancakes with walnuts, and if desired, add sugar mixed with vanilla sugar and cinnamon. Close the pancakes like a triangle and arrange on a plate.
- In a deep round bowl, place the egg and yolk, add the sugar and beat to froth, add the wine and place in a steam bath to cook. Stir all the time and beat with a whisk to get a thick foam.
- Pour over the pancakes while still hot and serve immediately!
