Preparation steps
- Cut the breast into thin pieces, and if they are a little thick, break them with a mallet. Add salt and pepper. In a deeper bowl, beat the eggs, add the milk and beat with a fork to connect.
- First, roll the meat in flour, then dip it in eggs and finally in breadcrumbs. Fry in hot oil until golden brown on all sides. When they are fried, remove them from the side (I have fried meat left from the previous day, so I used it).
- Peel the potatoes, carrots and zucchini and then chop them into small pieces. Peel the onions and cut them into cubes.
- Pour enough oil into the skillet to cover the bottom. When the oil heats up, add the chopped onion and fry until soft. Then add all the vegetables (potatoes, carrots and zucchini), add the vegeta, and fry for about 5 minutes.
- Add tomato puree, stir, and finally fried meat. Drizzle with water to cover all the vegetables and meat, reduce the temperature to medium, and cook until the vegetables and meat soften. Add salt and water if necessary.
- Do not add a lot of water, it should not be too liquid. When everything has softened and the liquid has almost evaporated, remove it from the side, leave it to cool, then serve.
