White lemon wafer
This is a recipe that has been circulating in the family and among friends for a long time ... Refreshing lemon rhomboids from wafers ... :)
Preparation steps
- Put the margarine, sugar, limuntus and lemon zest to melt, and when they boil, add the slightly beaten eggs with a fork and cook all together until they thicken slightly.
- Cool the filling a bit (it doesn't need to be completely cold because it won't be able to be lubricated), and then lubricate the wafers (I applied a silicone coating brush).
- When the wafers are tightened (I loaded them with something heavy from above to tighten them as much as possible) and cooled (it is best to leave them overnight), cut into cubes or rhomboids.
