White fish in "cosa nostra" sauce
Tabinja is a white fish from the cod family. It is twice as cheap as hake, therefore, undervalued. My friend's mom hunts it near the island of Drvenik and dries it like cod. It is excellent "on the corpse", baked, breaded (fillets) ...
Preparation steps
- Remove the fish "guts", wash and dry with a cloth or kitchen paper. Use a sharp knife to cut 2x over the back. Fins, mustache and tail can be cut with scissors.
- In a bowl, in which we intend to bake the fish, mix the capers, finely chopped fresh rosemary, salted anchovies and garlic, vegeta, salt, oregano and olive oil, and roll each fish in the sauce. Try the sauce and add salt as desired.
- Push the lemon slice into the dissolved part.
- Bake in a preheated oven at 200 degrees for 20 minutes.

Serve with spinach, chard, boiled potatoes, baked potatoes, salad ...
