Walnut nougat

very fine dessert from the territory of the former USSR, the recipe was given to me by my grandmother who got it from a friend who lived in Russia

Preparation steps

  • sugar syrup
  • boil sugar, honey and water until a caramel mixture is formed. use a spoon to remove the foam that forms on the mixture
  • Step 2
  • beat the egg whites into a solid batter, mix in the powdered sugar, transfer to a cooking bowl and pour over the sugar syrup
  • stirring with a food processor along the bottom to boil to medium hardness (drop a little of the mixture into a bowl of cold water and make a ball out of it, if the ball is hard the mixture is ready)
  • Step 3
  • add ground walnuts, vanilla and lemon peel to the mass, stir well to combine, pour on baking paper, cover with another paper and roll out to 2cm thick
  • chilled slice and serve
