Walnut and apricot cake
Delicious, juicy and quick walnut cake with apricots, suitable for all seasons ... Instead of fresh apricots, you can use compote or, as in my version, frozen apricot halves :) ...
Preparation steps
- Peel a squash, grate it and squeeze the juice. Defrost the frozen fruit earlier and drain the excess juice, or use compote, just drain the liquid. Grind the walnuts.
- Beat eggs with sugar, then add liquid ingredients, jam and ground walnuts, semolina and flour mixed with baking powder. Grease a mold with a diameter of 26 cm and sprinkle with flour and pour the prepared dough. Arrange the apricots on top and place in a preheated oven (190 C). Bake until it gets a nice color, prick the end of baking with a toothpick - if it is dry, the cake is baked.
