Waffles made of yellow, orange and red lentils in an oriental way with yogurt sauce,
This recipe was published in the free magazine "Alnatura" for February 2018. I translated the recipe as it is in the original and I changed the rules a bit, I used orange lentils and I made tahini sauce instead of yogurt and cheese sauce. For this recipe you need to have a waffle maker! The recipe envisages 10 waffles from the printed quantity and I made two larger pieces (and I ate them all myself, although on two occasions, but please don't spread this news further .... ;-) I have one "biscuit" with salad was enough as a main course and you as you want .....
Preparation steps
- Pour 1.5 liters of cold water over the lens and leave it to soften, then leave it to drip on a sieve. With the onion and garlic and other ingredients, put the lens in a mixer and grind everything well into a fine mass and leave it in the cold for 30 minutes. I ground the lentils into flour, in a coffee grinder, put it in a bowl and added all the other ingredients, chopping the onion and garlic very finely, pouring the ingredients with boiling water, just enough to make a sticky and thick mass, covered and left to stand.
- For the sauce, put all the ingredients in a bowl for a stick mixer and chop well with a stick mixer until everything turns into a puree. For my tahini sauce, I used 30 g of tahini paste, a little lemon juice and warm water (this is a modest measure for one person) and stirred everything slowly, adding water if necessary until you get the consistency of mayonnaise. Add salt and pepper as desired.
- Heat the Belgian waffle maker and grease it a bit, be careful because it is very hot. The original recipe envisages putting 4 portions the size of a walnut in a vending machine and baking for 1.5 -2 minutes. To do so with the remaining test, supposedly should turn out 10 pieces. I put half the mass and pressed it with the upper part of the machine and baked for 8 minutes, until it became finely crispy, the mixture stuck to the top of the machine so I waited a bit, maybe 1 minute, and separated a little with a wooden spatula and the waffle fell without problems . The other part of the mixture from hell the next day, the bowl with the mixture was not in the refrigerator. The mixture was great and baked well. I used neither almonds nor goji berries.
Serving
Serve with a sauce sprinkled with chopped almonds and goji berries
