Waffles in the manner of Grandma Bocusa (from cookbook by Paul Bocus)
Creamy dough with a neutral taste, goes well with salty and sweet spreads. The additional aroma is given by the abundant amount of butter and the egg white by the fluffy structure. Warm waffles are soft, and cold ones become semi-crunchy! Enjoyment! Bocus cookbook.
Preparation steps
- Sift flour with salt and baking powder.
- Add sugar, stir, gradually pour in milk and cream while mixing with a mixer.
- Add rum to the well-worked flour with milk and cream and gradually add the egg yolks one by one, stirring constantly with a mixer.
- Mix the melted butter into the mixture of flour and other ingredients.
- Make 4 egg whites in solid snow and carefully knead the waffle dough with a spatula.
- Heat the waffle iron and bake until golden brown. When I didn’t have a waffle maker, I baked the dough in a plain horizontal toaster.
Serving
Sprinkle the stem with sugar, spread with sweet or salty spreads.
