Verdens beste Kvæfjordkake
Traditional Norwegian cake. It goes well with forest fruits - strawberries, raspberries, blueberries.
Preparation steps
- Whisk 150g of margarine with a mixer and add 150g of sugar. Add 7 egg yolks one by one, and half of the 150g flour mixture. Finally add one tablespoon of vanilla sugar and baking powder, 5 tablespoons of milk, and the rest of the flour. Important note margarine, eggs and milk should be at room temperature. Place baking paper on a large baking tray and spread this mixture on it and spread it in a thin layer.
- Beat 7 egg whites with 300g of sugar, which we add a little. Spread this mixture on the first layer and sprinkle with 150g of finely chopped almonds. The mixture should not be spread until the end of the pan, because it grows during baking. Bake at 160 degrees for 30 minutes. When the crust is done, wait for it to cool and cut it in half (vertically)
- Whisk 3 decilitres of cooking cream (kremfløte) with a mixer and add one teaspoon of vanilla sugar and ground sugar. In a separate bowl, whisk the vanilla cream 500g (vanilla cream). Finally, assemble it, stir with a spoon and pour over one half of the crust, and put the other half of the crust over. Serve with wild berries.
