Vejan rafioli
Vejanski rafijoli - traditional Krk sweet during the masquerade, is something you must insist on when visiting our island. This is not the same as the old Dalmatian Christmas dessert, although they look similar in appearance (primarily they differ in the main actors - in Dalmatia it is almonds, and in Kvarner sheep cheese). With this recipe, I bring to your table another Krk traditional dish of our ancestors with a touch of Dobrinj!
Preparation steps
- Add butter and margarine to the crumbs and sugar, and pour hot water over them to melt them, adding a little at a time, and finally add the grated sheep cheese and lemon zest. Knead everything together, and if necessary add more water - form small buns - crescents.
- Knead the flour, eggs, sugar, oil, salt and a little lukewarm water into a smooth dough. It should not be too soft, so add more flour if necessary!
- The dough is rolled out as thin as possible and cut into round shapes with a diameter of 10 cm, ie depending on the size of the shaped filling.
- Place the loaves on the cut shape, fold them into crescents and secure the edges well. You can remove the excess with a dough wheel or, as in the picture, wrap them with your fingers in a good way.
- Fry in hot oil on both sides until golden brown. Serve warm!
Serving
If you want to insist on an original old-fashioned recipe, use lard instead of margarine and butter. You can also prepare the filling the day before, and for the second day leave only the preparation of the dough and the completion of the raffia.
