My aunt, who isn’t really my aunt anymore, but all these years, she and her husband have been my only family, besides my uncle’s mom, my dear grandmother, and who have been with me in both good and evil, the only family my children have have on my father's side, tomorrow he celebrates his special birthday, this is my small contribution to that celebration. Preparation steps
- Separate the egg whites from the yolks. Whisk the egg whites and set them aside. Whisk the egg yolks and sugar with a mixer until it changes color and the sugar melts. Add baking powder, double, finely grated lemon zest and stir. Add egg whites, mix them with a food processor until the mixture is combined.
- Divide the mixture into two parts, add cocoa to one part and combine well. Molds, size 25cm X 37cm, or similar sizes, set with baking paper and pour both doughs, each separately. If you do not have two trays of the same size, bake, one at a time.
- Bake in a preheated oven at 180 ° C for about 9 minutes, or until it is slightly browned and the sides of the rolls are separated from the sides of the baking sheet.

- Melt 100 g of chocolate in a steamer or microwave. Put a little water in one sherpa, let it boil, put a metal bowl over it in which you will put 2 egg yolks and half of powdered sugar and stir until your egg yolk thickens. Remove and cool, add room temperature butter, the rest of the powdered sugar and rum, whisk until you get a frothy mixture.
- Divide the filling into two bowls, add melted chocolate to one, leave the other yellow. Set them aside.
- Wrap the baked rolls with paper, first wrap the yellow roll, wrap the brown roll over it, so wrap both rolls in one roll, wrap in a clean kitchen cloth and leave to cool. Unwrap the cooled rolls carefully, remove the baking paper. Coat the brown rolls with yellow filling, put yellow rolls over the filling and coat with chocolate filling. glaze.
- Roll glaze:
- Put 100 g of chocolate, 3 tablespoons of water, 2 tablespoons of sugar and butter in a small sherpa and combine all the ingredients, stirring constantly. Pour over the rolls and garnish with chocolate crumbs.
- Cut the cooled roll into pieces, arrange in steps and decorate with orange semicircles.
