Turkish-style cakes (Yonca Poğaça Tarifi)
I adore Turkish pastries because they are soft for a long time and are not complicated to make ... try these cakes, you might like them. I try not to eat a lot of dough, but when I see something new, I can’t resist them.
Preparation steps
- Put a teaspoon of sugar and dry yeast in half of the warm milk, mix and set aside for the yeast to rise. Sift the flour, (put 700 of it first, leave the rest aside and add if necessary and I usually mix two types of flour, all special purpose and bread flour because such dough is much better for me .... here is 250 g of bread flour and 500 g all purpose flour) add a teaspoon of salt and mix everything, make a depression in the middle of the flour. Combine milk, oil, egg white, egg and mix everything together and pour in the middle of the flour and add the yeast. Knead the dough by hand or with a mixer until you get a soft dough that does not stick to your fingers. Shape the dough into a ball, sprinkle the bottom of the dough with flour and put the dough and sprinkle the dough on top with a little flour. Cover with cling film and a kitchen towel and leave in the fridge overnight. In the morning, the dough should rise.
- Divide the risen dough into 18 equal parts, or into as many parts as you want your cakes to be big or small, and shape them into balls. Leave them to rest for a while.
- Sprinkle the work surface with density, if necessary. Use your fingers to spread each ball about 1 cm thick and cut it into 4 sides.
- Put a piece of cheese on each cut part or crumble it first, whichever is easier for you. Raise the pages to wrap the cheese and assemble them in the middle of the dough (see picture) Instead of cheese, you can use boiled potatoes, which you have mashed, add a little cheese, parsley and salt and combine everything together. Do so with all 4 pages.
- Slightly push the assembled pages into the middle of the dough with your finger so that they stick together and spread the dough around the cheese a little so that the cheese is visible. Arrange the cakes made in this way (you may need two trays, I needed them) on a baking tray, which you have covered with baking paper. Use a knife to cut circles of red or green peppers and place them in the middle of the dough where you have joined all the ends together. Cover with cling film and leave for about twenty minutes for the cakes to rise. Turn on the oven to 200 ° C to heat. Coat them with beaten egg yolk and a spoonful of milk and bake them for about 25 minutes or until they turn brown. Cool them briefly and serve warm with yogurt, milk, juice ...
