Preparation steps
- Put the flour in a deep bowl, make a depression in the middle and add the yeast, salt and oil and slowly add the water to knead the dough. If you are using fresh yeast, it should be dissolved with a little water (from the amount needed for the recipe) and a pinch of sugar and left to rise.
- Leave the dough to rest for one hour. When it has grown, mix it a little on a floured table and divide it into 6 equal parts. Make a ball from each part and then roll it into a thin roller. Grasp the ends (bent in half, you get two rollers) and turn them in the opposite direction on both sides. So turn the end you are holding with your right hand to the right and with your left hand to the left. Grasp the ends, press them to stick together (to get the shape of wreaths) and roll a little with your fingers only where the ends join.
- Put a mixture of molasses and water in a deep plate and sesame in another plate. Dip the simites first in the molasses and then in the sesame seeds and place them in a baking tray lined with baking paper. Let them rest for an hour.
- Preheat oven to 220c and bake simite for 25 minutes. I baked at 210c for 20 minutes, 220c with me would be too strong.

- Five and a half years later Small changes that I tried according to other recipes and the result is much better. 1 - Before baking, I left the sims to rest only while the oven was heating up, not 30 minutes 2 - I baked them at 230C for 20 minutes, in the oven with a fan 3 - When the pan is placed in the oven, spray the bottom of the oven with water - baked like this the Simites will be crispier.
