Turkish hats with mascarpone cheese
I don't like when I have some groceries left, nor do I have enough to make something, nor do I buy more to make something ... at first I thought of making some dessert in a glass, but we had so many cakes and treats around the holidays, and for wonderful Miracle, we don't stop hanging out with our dear friends, so we eat some sweets there too ... I wandered around the internet a bit to find some bread and I was glad to find this bread, which I easily turned into a pastry. I love the shape of these pastries and that's why I shaped them like this ... otherwise I rarely make pastries / dough in which I put cheese, but the pain made me ...
Preparation steps
- Mix both flours (although I personally don't think there is a need for these 20 g of all-purpose flour, 300 g of bread flour can be used) and sift them into a blender, add dry yeast (if you use fresh yeast, stir it in a little warm water with a teaspoon of sugar and when it rises add the dough) lightly beaten egg, mascarpone cheese, sugar and warm but not hot water and start to knead the dough slowly and when everything is combined then add the butter that you cut into cubes and add one cube at a time, but knead a good dough each time to get a smooth and soft dough. If you need to add flour, add it very little until the dough is smooth and very little sticky. Shape into a ball, coat with very little melted butter, cover and leave in a warm place to double the dough.
- Pour the risen dough on the work surface, which you lightly sprinkled with thickener or flour. Divide into 6 or 8 equal parts and shape each part into a smooth ball. Set them aside, cover them with a transparent foil so that the dough does not dry out.
- Take one part and divide it into a rectangle. Melt those 25 g of butter and set aside. Cut the pizza into strips lengthwise with a cutter, coat lightly with melted butter and start from one corner to roll into a roll and then wrap in the shape of a turban
- Cover the baking tray with baking paper and arrange the wrapped turbans. Cover with a kitchen cloth and leave for half an hour for the dough to rise once more (you may need more than half an hour, depending on how warm your kitchen is). egg, sprinkle with poppy seeds and bake in a preheated oven at 180 ° C for about 20 to 25 minutes or until golden brown as you like.
- Bread can also be made from this dough. Divide the risen dough into 3 parts, divide each part into a narrower one (let it be the width of the mold you will use) and wrap the longer rectangle in a roll. Do the same with the remaining two parts of the dough. Spray the mold, size 10cm X 22.5cm, with baking spray or cover with baking paper and put 3 rolls and leave in a warm place for the dough to rise almost 3/4 of the depth of the baking tray and then bake like a pastry.
- Cool the baked pastry briefly and serve with yogurt, jam or whatever you like. If you like the dough to be sweeter, add a total of 50 g of sugar, this was perfectly fine for us and ideal with morning coffee or tea.
