Tuiles with black sesame
Tuile / tuil / in French means tile and refers to those oblong hollow tiles that were used especially in Provence to which this cookie can resemble in shape. When they are just taken out of the oven, they are soft and can be shaped, after which they become irresistibly crispy. This time I opted for the classic round shape. P.S. I have egg yolks left, do you have any suggestions on what to do with them?
Preparation steps
- Preheat the oven to 200 degrees and prepare a baking tray covered with baking paper. Mix sugar and butter, combine them with a whisk. Add egg whites and whisk. Then add flour and vanilla and mix lightly until the mixture becomes smooth and silky. You will notice that the dough is too rare to take in your hands, like a still warm pudding.
- Now, there are different design variants. You can take a round cookie cutter and spread the dough inside it to get the right shape. You can also draw circles with a pencil on paper and fill them. And it can, as it was for me, that you really care about the shape and that you only shape the biscuits with a spoon with your free hand. 1 biscuit requires approximately one teaspoon of dough. Sprinkle them with black sesame seeds before putting them in the oven.
- Bake them for about 5-6 minutes until the edges start to change. Take the baking tray out of the oven and after about 30 seconds, remove them from the baking paper and shape as desired. If they become too hard to shape simply return them to the warm oven for a few seconds.

Serving
Serve them with ice cream, sorbets, fresh fruit, puddings and pancakes. Or just nibble them like this.
