Trogir rafioli

Preparation steps
- Whisk the fat, sugar, egg yolks, vanilla, rum, a little salt, pastry, milk and prosecco. Add the mixture to the flour and knead a smooth soft dough, cover it with a transparent foil and leave it to rest for at least an hour.
- Grind the almonds so that half is fine and the other half is coarsely ground. Mix all the ingredients and finally add the egg whites. Stir the mixture by hand and add as much egg white as needed because the mixture must not be thin.
- To make rafioli we need a round mold. My mold is 11 cm in diameter, so it turns out to be a good size, they are neither small nor too big. If you don't have a mold, you can use it with a small plate or a pudding bowl .... We cut the circles. Put a stuffing in each circle with a small spoon, spread the edges of the dough with half-beaten egg whites. Fold the dough circles, lightly press the edges with your fingers to make them stick. we drill a hole at the top with a toothpick so that they do not crack when baked. Bake them on a moderate heat for 10-15 minutes, they must remain pale. When they are done, take them out of the oven and still hot coat them with grapefruit and sprinkle with crystal sugar. When they cool, they are ready to serve.
Serving
Rafioles can last a long time, so if you have the opportunity, you can make them 4-5 days earlier. Put them in a box and wrap everything in a nylon bag so that they do not dry out.
