Trnovečki makači

Our friends and godparents live in Trnovac Bartolovečki near Varaždin. The traditional cake of their region is these poppy seed strudels, which they call makači. The godmother's mother baked them and served them on her granddaughter's birthday in the hills with barbecue and wine. A more perfect and tastier cake for me, I have hardly found it lately. Of course, the recipe is given in the original and is not at all dietary. When you eat two pieces of these macaques, you can dig in the mine or in the hills all day later.

Preparation steps

  • From the flour, oil, salt and lukewarm water, knead a soft dough with water.
  • Leave well oiled to stand for about half an hour.
  • Roll out the dough as thin as possible, as for pies or bureks, remove the thicker edges, and spread the dough with the filling and roll it out.
  • Prepare the filling by boiling poppy seeds in boiling milk, adding sugar, butter and vanilla sugar, removing from the heat and cooling.
  • Add the egg yolk and half the amount of cream to the cooled mixture, beat the egg whites into a solid batter and finally mix lightly into the mixture.
  • Cut the roll cake to the size of a baking sheet, place it in a greased pan and pour over the rest of the cream.
  • Bake at 180 ° C for about half an hour.
  • Sprinkle hot baked macaques with powdered sugar and serve hot, or as you like.

Serving

They go especially well with white wine or barbecue. The amount of sugar and butter is optional. Be guided by your feelings. The latest for me is to put about 30 dag of sugar in sugar and about 12 dag of butter.

Frittata with spring onions and zucchini

Just like in fashion, cooking often "recycles" good old combinations. Fritaja is one of those. With grated parmesan, basil, olive oil and the main ingredients, baked in the oven, it will just shine with a new glow.

Grapefruit kuglof

In addition to giving a special tasty note to the kuglof, grapefruit preserves the freshness of this cake. It's not like pushing a poppy on a string, but if the black dots of poppy end on the shiny white glaze of kuglof, you will be convinced that this final touch made this cake special, recognizable by its unique shape.

It is a real shame that fresh plums are so rarely seen in cakes! Take advantage of a summer trip to the countryside and stock up on this sweet, ripe fruit, make a stuffing full of spices and fold it into a real homemade strudel.
