Tripe, bacon fillets, dropčić, tripe ... a dish that has its fans as well as those who miss it. Once upon a time when I was a girl we made them exclusively homemade lamb tripe, it was washed and cleaned in the sea that way they have lunch and for the day after:) ... I prepare them like this.

  • If fresh tripe * is cooked like this: Wash the tripe well and put it in cold water together with parsley and bay leaves (various spices can be mixed, to kill the smell of fresh tripe, all in one piece, so that it can be easily removed later), cook until cooked through. When they are soft, they should be taken out, cooled and cut into strips. Nowadays, they are already half-cooked and such, by themselves, have almost no smell and are quite neutral, so their taste depends on you. If you are cooking frozen semi-cooked, you just need to boil them in water.
  • Saute the onion in oil and add the bacon and tripe.
  • Drizzle with wine, if necessary, simmer for a while,
  • add a little red pepper, season with spices and finally add diced potatoes. Cook until potatoes are soft.

Serving

Sprinkle with grated cheese.
