Tom Kha Gai

or Tom Kha Kai. The famous Tai soup with chicken and coconut milk. It always delights me again and again.

Preparation steps

  • Chop the carrots into slices. Cut the peppers into strips. Cut the lemon grass in half lengthwise. Galangal root chop into thin slices. Finely chop the chili. Cut the onion into 4 parts. Peel a squash, grate it and chop finely. Chop the mushrooms flat. Chop the chicken into small pieces.
  • In the bowl in which you will cook the soup, put the chicken stock, 2/3 of coconut milk and chopped carrots.
  • When it starts to boil add the lemon pan, galangal, chili, sugar, pepper and cook for 5 minutes.
  • Add onion, tomato, chicken, mushrooms, peppers, sprouts, bamboo and cook for about 4 minutes.
  • When you remove the soup from the heat, mix in the lemon juice and fish sauce mixed with the remaining coconut milk. Sprinkle with finely chopped coriander.

Serving

Serve this soup with a bowl of rice and have a light dinner. There are no peppers, sprouts or bamboo in the original recipe.
