Preparation steps
- You can also use fresh cherries from the freezer. Preferably unsprayed.
- First you need to prepare glass bottles, wash them well and turn them to dry. Arrange the best bottles to dry well in a basket lined with clean kitchen towels. If cork or rubber plugs (solid or new) are used, they should be boiled immediately for 15 minutes in water with a little baking soda, they should not be taken out of the water until you use them. Metal closures should be avoided unless they are made of another quality material that does not rust, in which case they should be boiled immediately before use.
- When preparing the juice, it is very important that the hands and the container in which they are used are clean. In a large bowl, place the cherries well washed and pitted with your hands. If you do not want to get your hands dirty, wear sterile gloves.
- Shake everything on a colander to strain the juice and pass it further through the colander to separate the shell from the juice as much as possible. Finally strain through gauze.
- Heat the strained juice with the sugar until the sugar has melted and foam begins to form on the surface. Cool and pour into bottles. Store in a cool place.
- 1 kg of sugar goes to 1 liter of juice. You can try the first pu with half a liter of strained cherry juice and half a kg of sugar.
