The simplest side dish of amaranth

The food of ancient American peoples, amaranth is a grain of small grains, very similar to quinoa, but much milder (to me almost neutral) taste. According to several sources, it contains twice as much calcium as milk, and three times as much fiber as wheat, a considerable amount of protein, and a whole range of minerals and vitamins. It is easily digestible, and it can be used to make both salty and sweet dishes. Gluten free. This side dish is very simple, and is prepared in one bowl :)

Preparation steps

  • In a saucepan put water, amaranth, mashed tomatoes, finely chop the garlic and spices. Put on the fire and cook, stirring occasionally, for 30-35 minutes, until the mixture thickens. Ta-daa! :)
