Tepsi Böreği
Turkish pide burek, bread burek stuffed with cheese. Enjoy this wonderful dish from the Karaman region.
Preparation steps
- Put egg white on the bottom of a large mixing bowl, sift flour together with salt on it. Make a hole in the middle, put sugar, yeast, soft butter, oil and mix everything with the addition of warm milk. Put the dough on a mixing table and mix the dough until smooth if necessary, add a little more flour. Return the dough to the mixing bowl, cover with cling film and leave to rise for about half an hour. Prepare the cheese, crumble it and mix with chopped parsley, if using cottage cheese / ricotta then add salt and pepper if using salted cheese from brine or feta do not add extra salt but only pepper.
- Divide the dough into two parts. Place the baking paper on a round baking sheet / 30 cm large / for baking, spread the first part of the dough on the bottom with greasy hands, spread it all over the cheese and spread it evenly. Cover the cheese with the rest of the dough. Coat well with lightly beaten egg yolk and sprinkle generously with sesame seeds.
- Cut the burek into 8 parts .Put the oven in a preheated oven at 200C first guide from the bottom for some 30-40 min or until the burek starts to move and get a nice color.
- Serve with a glass of yogurt or as an addition to appetizers, etc.
