Tavče gravče are štavej

For my 50 recipes - one of my favorite dishes: the famous Macedonian specialty in a supplemented version :)

Preparation steps

  • Pour the beans with about two liters of cold water, add finely chopped onion and grated or finely chopped carrot. When it boils, reduce the temperature to the lowest and cook until the beans soften. If necessary, add a little more warm water during cooking. Don't salt it!
  • Finely chop the cabbage, then fry it in a little oil. Set it aside.
  • Slightly heat a little more oil, then add flour and fry it, stirring occasionally. When done, add the allspice, stir and immediately add the beans, so that the peppers do not burn. So add only cooked beans and about 3 cups of liquid. Add the greens, mix nicely, season with and pepper to taste. Add garlic if desired.
  • Transfer the mixture to a baking pan or arrange in earthenware pots, then bake in the oven at 250 degrees, just enough to catch the crust.
  • p.s.1: I never throw the first water in which the beans are cooked, I only cook them in that one. At the end when it is cooked and when I have added the paste, I turn off the hob and add a little dry mint. That's a great trick I learned from my dear grandmother - it will make it easier to "digest" beans and give the dish a smell that will delight everyone, and no one will know what it is :) p.s.2: Of course, you can also use already cooked and fried beans. Just mix the beans with the fried cabbage and bake :)

Serving

Serve warm with some fresh salad and homemade bread :)
