Tahini paste - sesame spread
I was hoping for a lot of money to buy ... It was of different quality, taste, and of course the price. Lately, I'm really disappointed, because I only come across one that is rare, or I find it from another manufacturer, but they mix it with some supplements that I don't want, because I need the simplest one. And I say to myself - if others can make tahini at home, I will make it too! Especially since it's a job of fifteen minutes, and the taste is much better ... :)))
Preparation steps
- Put sesame seeds in a large pan with a thick bottom, then fry it dry over a medium heat until golden brown. Stir constantly and do not allow the seeds to burn, otherwise you will get a bitter and ugly tahini. Remove from the heat and immediately transfer to another wider and shallow dish so that the sesame is no longer roasted.
- Put sesame seeds in a blender (or chopper, it is important that they are sharp steel knives) and grind it finely to start sticking to the sides of the dish. Add a little oil, then mix again, add more oil and remove the glued mass from the walls of the vessel in which we are mixing with a spatula and return it to combine everything nicely to the desired density.
- If desired, add salt and stir a little more (I like thicker because of the spread on the bread, and I can always add oil afterwards). Pour the finished tahini into a jar and store in the refrigerator.
- This spread is used to prepare other spreads - for Hummus, Baba ganush, falafel dressing, tuna pate, klot spread on toasted homemade bread or integral buns, mixed with honey as a dessert .. And of course, for my favorite sesame sauce - Thinu!
