Tafelspitz mit Meerettichsoße or boiled beef with horseradish sauce
I never ate this this way until I moved to Deutschland. I didn't mean to put the recipe at all, but that dear DaSilva has something to cook tomorrow ... Here it is. Queens, just for you;)
Preparation steps
- Put the meat in cold water, even the bones are welcome, you will have a better soup. Add the bay leaf and a little fried onion (halve it and fry without fat in a pan), and peppercorns. Uncovered, let it boil over a high heat and remove the foam that forms. Cook over high heat for about 10 minutes and then reduce and add the remaining vegetables and salt, then cook covered for about 2 hours for about 2 hours.
- For the sauce, clean the horseradish and grate it on the smallest currants (tears will flow in the streams;)) Put the butter and flour in a bowl and heat, but it should not turn brown. Just mix quite well and when it boils, add the soup and milk or cream. Do not add everything at once, you can easily add it later if it is too thick. Jr is not very good if it is too rare. So the liquid, the rest, you can add at the end. I usually pour in all the milk and only half of the soup, so I add at the end if it’s too thick. Cook for at least 20 minutes, stirring constantly over low heat. That's how the floury taste of the sauce is lost. Add salt, nutmeg, pepper if desired and grated horseradish and cook for another 2-3 minutes. The sauce is ready!
- Cut the meat into slices and serve with the sauce. Boiled potatoes suit me best. I cut it into cubes and cook in the soup. It fits perfectly. Good apetite
