Syrian Riza and Orange Pudding
Since the topic of our new boss was pudding, I decided to prepare this delicious treat. Roz Bi Haleeb Mbattan is a traditional rice pudding in the Middle East and the difference from our sutlija is that a little rose water or orange blossom water or even a few mastic crystals are added, which gives it a specific taste. This rice pudding has a layer of orange pudding which is a traditional pudding preparation in Aleppo, Syria. The taste is very refreshing.
Preparation steps
- Put the milk to boil. Put the rice in another bowl and wash just a little so that as much starch remains as this will help the pudding to harden.
- When the milk has boiled, put the rice with water and let it boil until the water boils. Make sure it doesn't burn you, stir. This process can take from 20 minutes to 40 minutes depending on which rice you use. When you see that it has become thicker add sugar, vanilla sugar and if you have orange blossom water. Stir and cook until the sugar melts. When it's done, shake it into bowls as desired, leaving room for another pudding. Note: If you are still watery and your rice is cooked, then add 1-2 tablespoons of density mixed with a little water.
- Put 300 ml of orange juice in a bowl to cook and in another bowl mix 200 ml of juice with sugar and density so that you do not have lumps.
- Add the mixture to the juice, stir for a few minutes until the mixture becomes thick.
- When your rice pudding has cooled add the orange pudding over and leave in the fridge to cool completely. Before serving, add a little grated orange peel and, if desired, walnuts, almonds or pistachios.
