Sweet red Camargue rice with shrimp
Quite unusual, it belongs to the Eastern cuisine… and this red rice is grown in the French region of Camargue in Provence, hence the name.
Preparation steps
- Rinse the rice with cold water and strain. Put to boil pineapple juice with coconut milk, sliced tomatoes and one sliced onion. When it boils add the rice and cook on low heat for 45 minutes. Meanwhile, after 20 minutes from the start of cooking, add fresh pineapple and season with curry, salt and pepper. Keep cooking. When done decorate with shrimp tails.
