Sweet bushes

What would Carnival Tuesday be like if it weren't at least some kind of fried dough. This fine and crunchy fried dough with an unusual name is a Polish recipe and was originally called "Faworkow" which means thick, bushes or dry branches. Otherwise, the dough is aromatic, enriched with eggs and the aroma of vodka, and it is squeezed out of the bag or pump, usually in a circle. There are other versions of this dessert, the American one and it is called "Funnel cake" and it is a typical street or carnival dessert, usually made of a very simple dough, and only vanilla is added from the spices. There is also an Italian version called "Furtaies" and it is made from aromatic dough with the addition of homemade brandy, usually grapefruit, unlike previous versions, this fried dough is served in honor of the fiancé. I hope that this dessert will delight you as much as it does me because, unlike donuts and fritters, it is extremely light and airy.

Preparation steps

  • Separate the egg whites from the yolks, then beat them with a little salt into a firm foam and set aside. In a separate bowl, mix the egg yolks with the vanilla until they turn white and increase in volume. Add vodka, milk, both crusts and flour mixed with baking powder to the egg yolks, and mix into a uniform mass. Finally, mix the egg whites into this mixture with a spatula.
  • Transfer the dough to a pastry bag with a small opening or even better to a washed and dried plastic bowl of mustard, mayonnaise or ketchup, with them it will be easiest to squeeze the dough into hot oil, especially when you need to put the bag full of thin dough while turning what is frying .
  • I used a smaller, narrower and deeper pan for frying because I wanted smaller versions of these rusks. When the dough is squeezed into hot oil it tends to expand until it reaches an obstacle and therefore it is better to use a smaller bowl. It may seem too slow, but everything is almost very fast because this dry branch is fried very quickly. So fry the extruded dough until golden yellow on both sides.
  • Transfer the toasted dough to paper towels to drain off the excess oil, then transfer to a serving plate and sprinkle with powdered sugar. Serve immediately.
