Sugar-free buckwheat flour muffins with cherries
This is an ideal dessert for those who have eliminated white sugar from their diet, instead of sweeteners I used organic coconut sugar which is healthy and recommended for use during diets. Muffins are fine, soft and tasty, and you can eat them without much remorse. From this amount of mixture, you will get 15 muffins
Preparation steps
- Separate the egg yolks from the egg whites. Whisk the egg whites well to make them as firm as possible, mixer at maximum speed. When you whisk the egg whites, add the coconut sugar and when the mixture is well whipped, add the egg yolks. Whisk the mixture well to make it frothy. Then add half a bag of baking powder and stir in a little baking soda for another minute. Add flour and stir for 2 to 3 minutes, then add yogurt, the mass will become thin, but with the addition of cocoa, it will thicken as needed. When the mixture thickens, add melted butter. Finally, add the cherries and combine this mass with a spoon. Preheat the oven to 200 degrees, while the oven heats up, place the baskets in the muffin tin and pour the mixture. Muffins grow nicely so pour the mixture to half a basket. Bake the muffins for 25 minutes. Enjoy this healthy and delicious cake!
