Stuffed mini focaccia

Very tasty pastry with feta cheese and bacon, convenient to take away and nice and soft the next day, if there is any left;))

Preparation steps

  • Put a teaspoon of sugar, a teaspoon of flour and crushed yeast in 1 dl of warm water, stir and leave to foam.
  • Put 400 g of flour, salt, oregano, oil, 2 dl of water and activated yeast in a bowl. Stir with a food processor and continue mixing by hand with the addition of the rest of the flour until you knead a nice, smooth dough. Wrap the bowl in a tablecloth or a larger cloth and leave it in a warm place without drafts (it is best to leave it in a closed, switched off oven), for at least 45 minutes, to rise nicely.
  • While the dough is resting, grind the cheese and cut the bacon into small pieces and fry in a pan, then drain the fat.
  • When the dough has risen, sprinkle the table with flour, hand out the dough and mix a little more, and then roll it out into a rectangle half a centimeter thick with a rolling pin.
  • Put the shredded cheese and fried bacon in half and fold in the other part of the dough. Using a round donut mold (or a glass with a sharp edge), take out the circles, press them a little more with your fingers, it doesn't matter if the cheese or bacon is boiling, push them back and arrange them on a baking sheet lined with baking paper.
  • Simply knead the rest of the dough left over from the cutting with your hands and make cakes.
  • Prick each focaccia with the round end of a food processor, so that when it is baked, it will have a nice, rustic look. Coat them with olive oil, prick rosemary sprigs and sprinkle with coarse salt. Bake in the oven, adjust the baking time to your oven, they bake for me in 25 minutes at 180 degrees. *************************************************** ************ - From this measure, 9 focaccia with a diameter of 9 cm are obtained, and three, four cakes, from the remains. It can also be done by unrolling the dough and first taking out the circles, putting the filling in half and covering the rest of the circles, but for me this is a simpler and faster variant, the only thing is that they are not exactly the same but in that slightly messy look is their beauty )) - Instead of bacon, you can fry finely chopped mushrooms and put them in the stuffing.

Serving

The seals are very fine and soft the next day, as are all the doughs that contain oil. This small, they are very convenient to pack, children or adults, for a snack;))
