STUFFED CROBIAN CROQUETS: 'PAPAS RELLENAS'
Potatoes and meat are always a good combination. Here is something different from everyday and extremely tasty: Cuban specialty, meaning: stuffed mashed potatoes, reads: papas rejenas. This dish is made in Mexico, throughout Central and South America, and each country has its own different version.
Preparation steps
- While the mashed potatoes are cooking, fry the onions and meat. Grind peppers into a multipractice. Add all the ingredients from the filling list to the meat. If you prefer olives to peppers, this is also a variant I came across when I was looking for a recipe. Those big greens that have red peppers in the middle are recommended. The puree should be thicker than when you usually make it. Add just a little milk to combine the flour and potatoes.
- Allow both mixtures to cool. Make a thinned mashed potato in your hand and put the mixture with the meat in the middle. Close everything and shape the ball. Put in the eggs first and then in the pretzels. Bake in oil until golden brown.
