Stinging nettle muffins
An article in a newspaper encouraged me to look for nettles. It is very healthy, and it is especially recommended for anemic people because it is rich in iron, it contains a significant amount of chlorophyll, mineral salts, vitamins C, A ..., but it should not be used uncooked and in large quantities. It can rarely be found on menus, although it is a delicious food.
Preparation steps
- First of all, it is necessary to clean the nettle (use medical gloves), wash and cut it into small pieces and put it in a bowl with hot water and leave it to simmer for 5 minutes. After that, the nettle needs to be washed and drained well.
- In a large bowl, beat the eggs, then add the oil, milk, salt, cheese and spread and mix everything well. Add corn and white flour with baking powder to the mixture and mix everything well. Finally add the nettles and level the mixture.
- Fill the muffin baskets with two tablespoons of the mixture, arrange them in molds and bake in a preheated oven at 200 degrees for about 20 minutes. From this mixture I got 21 muffins.
