Spinach risotto with mozzarella

Preparation steps
- Wash the spinach well and let it drain well. Put the soup to boil. When it is done, reduce the heat to a minimum.
- Put a little chopped onion in a little olive oil.
- Add the rice, sauté for a few minutes and pour in a little white wine.
- When the wine evaporates, add the spinach cut into strips, stir and start pouring over the soup.
- As soon as the soup evaporates, add a little new rice and stir as often as possible. Continue to cook the risotto until the rice is soft. Remove from the heat, add the mozzarella torn into small pieces ......
- ..... and mix carefully. Serve sprinkled with a little grated cheese.
