Speckoek
Spekkoek (ID: Spekuk or Lapis Zakonit) is an Indonesian cake made during the Dutch colonial period in Indonesia. The idea was probably derived from a similar type of cake of German origin, but was adapted to the resources available in Dutch Dutch consolidated Indonesia. Today it is prepared in the Netherlands, and sells for € 6 per piece of this cake.
Preparation steps
- Preheat oven to 180 degrees.
- Separate the egg yolks from the egg whites
- Whisk the butter well with a mixer.
- Whisk the egg yolks and sugar to whiten the butter, then add the whipped butter and mix everything well.
- Add flour and beat well again.
- Divide the mass into two parts and add cocoa, cinnamon and nutmeg to one.
- In the second part add vanilla extract.
- Whisk the egg whites well, divide into two parts, and add to the dark and light mass, mixing lightly with a plastic or wooden spoon.
- Coat a 22 cm diameter cake tin with melted butter, and put 3 tablespoons of light mass and distribute it finely with a spoon on the bottom of the mold.
- Bake in the oven for about ten minutes.
- Remove the mold and coat the first crust with melted butter, and put 3 tablespoons of dark dough which we distribute over the first crust.
- Put in the oven again for ten minutes and repeat the process until all the dough is used up.
- take the cake out and leave it to cool and pour over the melted chocolate mixed with a tablespoon of oil.

I decorated the cake with hazelnuts that I stuck on a toothpick, and dipped it in caramel and turned it to make a thread for me, and waited for the caramel to tighten.
