Sour lamb entrails

This was great for my mom. I tried to remember her recipe. By the taste, I think I managed to catch the taste that reminded me of my mom's cooking.

Preparation steps

  • Cook the lung and heart in salted water with bay leaf for 45 minutes in an espresso pot. Remove and cut into strips. Saute onion and garlic in oil, add liver cut into sticks and simmer for a few minutes, then add boiled heart and lungs. Continue to simmer for a few minutes, then pour over red wine. When alcohol evaporates, add vegeta, pepper, red pepper and peeled tomatoes and continue with cooking, adding a little water. Peel the potatoes and cut into small cubes and add to the entrails and continue cooking until the potatoes are cooked. Towards the end, add a tablespoon of wine vinegar. Check the taste, add chopped parsley and everything is ready to serve.
