Something like Grönsakskaka
... or IKEA potato and broccoli medallions - a version very similar to the original

Preparation steps
- Cut the potatoes (I use red ones) into cubes (as for baking) and cook in salted water for about 10 minutes. In parallel, chop the broccoli into florets and steam for 5 minutes.
- Saute leeks in a little butter and salt. I prefer no leeks so I omit this step.
- Crush the potatoes with a fork (do not puree completely, let the pieces remain). Chop the broccoli into smaller pieces. Cool slightly.
- Beat 2 eggs, add chopped garlic, cream, cheese spread, chilled leeks, grated cheese, parmesan, salt and pepper.
- Mix together the potatoes, broccoli and egg mixture. Place in butter-coated muffin tins (to get IKEA style medallions) or spread evenly in a fireproof dish (this is easier)
- Bake at 220 C for 20-25 minutes
