Preparation steps

  • Peel a red onion and chop each head a little and put it to boil. Cook for about half an hour. Strain and leave to cool. Make a mixture of meat, rice and add spices. Separate the leaves from these cooked onion heads. Put the filling in the onion leaves and twist.Put the dolma in a sieve so that the dolma stands upright (see picture) Put the dolma to cook for about 1 hour but at a low temperature.Leave the cooked one to cool.

Serving

When you need to serve the dolma, take out only as much as you will eat, heat it and you can put it over a little sweet cream or a little butter warmed with a little red pepper.
