Preparation steps

  • Dissolve yeast, 1 teaspoon of sugar and 1 teaspoon of flour in a little warm water. Leave on warm to allow the yeast to activate. Heat the remaining water and oil a little harder and cool with yogurt to be lukewarm. In a bowl sift the flour and mix with 1 teaspoon of salt. Add egg, yeast and lukewarm mixture of water, oil and yogurt and knead the dough. Transfer the dough to a floured work surface and make it well. Shape into a ball, return to a bowl, cover with nylon then a cloth and leave on warm for 1 hour to rise.
  • Line the bottom of the mold or refractory bowl Ø 20-22 cm with baking paper, coat the sides with butter. Melt and cool the coating butter, it should be liquid. Turn the dough over on a floured surface and divide it into 12 equal parts. Do not knead the dough. Roll out each piece of dough into a rectangle 20x15 cm. Thinly coat the entire surface with butter using a brush. Fold the dough like a book, the longer top to the longer bottom. A rectangle of 20x7.5 cm is obtained. Spread the cheese on the lower half of the longer side of the obtained strip, along the entire length, and thinly coat the upper one with butter. Again, fold the upper longer side to the lower, ie part of the dough with butter over the part with cheese. Use your fingers to connect the bottom edge of the dough. Coat thinly with butter and roll into a snail shape. Shape the remaining balls into snails in the same way.
  • While one piece of dough forms a snail, keep the others covered. Also cover the shaped snails to keep them from drying out. Stack the snails in a mold upright, round side up, the part we joined with our fingers down. Put 3 snails in the middle, stack the rest around them. Arrange the outer snails so that the ends are facing the middle three so that they do not unwind during baking. Cover with nylon and then a cloth and let them grow for at least half an hour. Then coat the top with egg yolk mixed with milk and sprinkle with sesame seeds. To make the shape of the snail better, sprinkle with fewer seeds or omit them altogether. Bake at 200 ° C for 40 minutes or until the pastry turns yellow-brown on top.
