Smoked tofu in couscous
One piece of smoked tofu in my fridge expired, I thought what to make of it, read about recipes, nothing really suited me in terms of quantities and ingredients, so it turned out to be a delicious dinner ...... the same as another, and completely different :)
Preparation steps
- Pour water over the couscous, add salt and oil and put on the fire until it boils, then remove from the heat and set aside while the rest is being prepared.
- Pour oil into a deep pan (wok), add a little sea salt and heat everything. Put red onion, spring onion and garlic on hot oil and stir briefly. Add zucchini cut into small slices and simmer briefly. Then add the smoked tofu cut into small cubes. Simmer again for 2-3 minutes, add sliced olives, season with salt and pepper to taste. In all that, while it is still on the fire, add couscous, stir well to connect everything nicely.
Serving
Serve warm, ie. from the wok directly to the plates. Enjoy a healthy, tasty and full meal .....
