Smoked sturgeon with vegetables in white wine

If you’ve ever “mentioned” fish bones too much, this is the fish for you, because the sturgeon doesn’t have a single bone, it doesn’t even have a spine; the sturgeon is literally a living fossil, a prehistoric fish, so you will find the spine in the shape of some gelatin, which has hints of the spine but is not bone, in any case a unique experience. Under the skin there are five rows of some kind of scales, which need to be removed.

Preparation steps

  • Before baking, cook the potatoes, almost to the end. Then put it together with the sturgeon in a baking dish. Oil the pan beforehand. Sprinkle the sturgeon with finely chopped garlic, salt the potatoes and sprinkle with rosemary. Add chopped red peppers, sliced ​​zucchini, and cherry tomatoes. Put a few cubes of butter and a few drops of lemon on it. Towards the end of baking, add white wine.
