Smoked salmon and cream cheese roll with pistachios
A beautiful roll that you can serve to your guests for an appetizer or a "lighter" lunch with the addition of onions and some fine crackers.
Preparation steps
- Wash the basil and chives, dry it with kitchen paper and chop it finely.
- Put cream cheese, chopped herbs, olive oil and pepper in a bowl and combine everything well. Try and add salt if necessary (I did not add salt, smoked salmon is salty enough for me)
- Arrange the salmon on a transparent foil, so that one small piece overlaps the other, to get one large slice. Coat it with the prepared filling, sprinkle with chopped pistachios, but leave an empty part about two cm at the end of the salmon slice, because when rolling, the filling can come out over the edges of the salmon.
- Using foil, roll the salmon into a roll, then wrap the rest of the foil on the right and left side like a sausage at the end, so that the roll forms a nice shape.
- Refrigerate until serving. If desired, you can decorate the roll with chopped pistachios, basil and red onion.
- The original recipe was with fresh salmon, I didn't like the idea, I don't like eating fresh fish, so I replaced it with smoked. I also replaced pistachios with toasted pumpkin seeds, because I didn't have them in the house at the moment.
